You're able to unlock this very early in the game: As soon as your Uncle shows you how to shoot after the tutorial, draw your pistol and shoot him. He'll become a ghost and unlock the achievement.
If you don't feel mean enough to shoot your Uncle in an actual playthrough, you can unlock this in around thirty seconds if you start a new game and check the box that says "Skip Tutorial". This starts you at your Uncle's ranch, just walk out of the house and shoot him.
