One screen to the right of Santa Anna there is a small brown building with a lizard on the front. Shoot it then fast travel somewhere and back again to make it respawn to repeat.

There is also a building I believe south of Clintsville that has a lizard on the wall as well. All you have to do for this achievement is shoot it off the wall not chase it down afterwards. And a heads up that I had to exit and reload the game for the lizard to spawn again, fast travel by horse wouldn't do it. Thumbs up for your solution!
