There are three jobs where you can ask the sheriff for help. Only two are necessary to make the sheriff regain his courage and pop
The Former Glory achievement in Westerado: Double Barreled worth 117 pointsHelp the Sheriff'regain his courage.
After the sheriff has regained his courage, talk to Tress at the sheriff's office (or with the sheriff following you*) to pop the achievement. The three jobs are:
The bank job
- Ask the banker in Clintville for a job
- Talk to the buffalo express in Santa Anna (straight west of Clintville) about the job
- Ask the sheriff for help
- Do the job at the buffalo express
The hat job
- Talk to Lt. Fort at the military fort (southeast of Clintville)
- Go to the Haberdashery and get them employees, then ask about the job
- Ask the sheriff for help
- Do the job at the buffalo express
The buffalo drive job
- Ask the Oil tycoon about a job (northeast of Clintville)
- If he doesn't take you seriously, pull your gun at him
- The oil tycoon will spill the beans about wanting to drive off rancher Bob
- Ask the sheriff for help with Rancher bob's buffalo drive
- Do the job at rancher Bob's
Doing all three should also unlock (although currently glitched)
The Make him Work for it. achievement in Westerado: Double Barreled worth 122 pointsMake the Sheriff help you 3 times.

I actually didn't talk to her at the Sheriff's office when I got this. I was going for "My Waifu" and went to her house to talk to her. The problem was that I also had the Sheriff following me around until I killed enough bandits around the Clintville area. So I guess because he was on screen, it gave me this instead.
