When your opponent performs a Power Disc (special move + OR ) you must reject his attack with a Slap Shot ( + direction) or a Drop Shot (). Either of these two moves will give you the achievement, just press the buttons before the puck reaches you.

This is relatively easy against a 2nd controller or against an online friend.
First, set up a match with no time limit, I set score limit to 21 too, just to be sure.
Then, either wait by letting the characters just toss the disc at each other, or play a bit like normal, until BOTH characters have their super move ready (bottom of the screen, the bars are filled).
Have the player not going for the achievement receiving the disc. Once he gets the disc, press + at the same time (X + Z if playing on PC). This should activate a power disc throw. Next, once the disc reaches the opponent's side of the field, have him press + or X+Z at the same time too. This should pop the achievement.
