While you can achieve this in any game mode it's best to do it in Time Trial or Speed Lap, since there won't be any AI ships to interfere. It's also best to use a Venom class ship, as higher speeds make it more difficult to land the jump.

At the end of the track, just before the left hand corner going on to the start finish straight, there is a speed pad that, when hit at the right angle, allows you enough air time to execute a barrel roll:



Pass over this and do a barrel roll by moving the left analogue stick left/right/left or right/left/right, and land it on the track below to earn this trophy. It might take a few attempts to hit the pad right and/or land the jump, but it's easy when you know where you're going. If you miss you can also turn round and go back to the jump point rather than completing another full lap of the track.

If you're struggling for height after hitting the speed pad, you can pull back on the left stick to pull your ship's nose up in the air and get some better clearance.
