the above are both good ways to do this, but seeing that it hadn't been posted yet I went ahead and did it this way to see if it would work and it did. as the same with the thank you Edge Achievement you can do this in the story maker mode too.
just set it up on legend difficulty at the wrestlemania arena and put all taker's limb damage in red. when the match started I just did one running STO and that was all it took to pin Taker, and the Achievement popped right up.

For this achievement you have to beat the Undertaker in the WrestleMania-Arena on Legend difficulty.
You can do this in Exhibition-Mode too. Be sure to play on Legend difficulty. Choose any superstar (I did it with Brock Lesnar) and select WrestleMania-Arena. Turn off DQ. Now hit Taker with chairs etc. until you get your Signature Move. Perform it and your Finisher too. Do this a second time just to make sure that he can't kick out of your pin.
In my first try I made him submit but the achievement didn't unlock. So in my 2nd try I pinned him and this works fine.

If you've purchased the season pass dlc for this game or really want to spend a dollar you can use the attribute editor on undertaker to make this a ton easier.

This is the achievement for pinning or making The Undertaker tap out on Legend mode in the Wrestle mania Arena
There is actually an easy way to do this.
Go to WWE Universe, skip to Wrestle mania and go to edit superstar, scroll down to Undertakers name and select a title for him to defend at Wrestle Mania.
It can be the WWE Championship or World Heavyweight Championship (It doesn't matter) and when you're done with that proceed to the title match.
It'll ask if you want to cash in *Insert wrestler* 's Money in the bank.. Say yes and as soon as the match starts pin The Undertaker and there you go!

For alot of people submitting Taker does not work. Pinning the Deadman is a guaranteed cheevo popper tho

This is the same as last year’s achievement. You can do this in either UNIVERSE or Exhibition mode. If you have any trouble with this, you can turn the reversal sliders all the way down in the options menu. Also, you can do this in ANY match type so I recommend an Extreme Rules match.
