Essencially, this achievement just requires you to win an I Quit match... but since this is a new match type, if you jump the gun and start one on your own without going through the one in the attitude era mode (and don't read the on-screen description) you may not know the best way to do this, so allow me to explain.

The I Quit match really isn't that different, in most ways, from any other No DQ match. Feel free to do whatever sick things you wish to your opponent - use weapons, put them through the announce table, the barricade, whatever you choose. After hitting a particularely nasty move such as an OMG moment or a finisher, stand near them and press B to have the referee ask them if they quit. This launches a stop bar minigame similar to a submission. If you want to make it a little harder on them, you can stand near them and taunt using the D-pad. Unlike most matches, in this instance taunting 'intimidates' your opponent and makes it harder for them to complete the mini-game, thus making it more likely you'll win. Once they give up, and you win the match this achievement will pop.

You do not need to make your opponent quit for this achievement ;)

A different (and easy) way to unlock this achievement is by combining it with the "holy sh***t" achievement.

Choose the I Quit match, pick Big Show versus Mark Henry and set your finishers to unlimited.

As soon as the match starts irish whip your opponent into the turnbuckle and execute the omg-move (press y). You will do a superplex, the ring will collapse and you will have 2 achievements in a few seconds.
