How to unlock the Jim achievement in WWE 2K18 - Definitive Guide

To use a grapple carry, press and hold RB, then push the right stick in either of the four directions. then press A to slam them down. Do this with all four directions to get the achievement.

Slipknot 008 informed me that it seems the achievement does not unlock in Universe mode. To be safe, go for this achievement in Play mode.

The achievement description does specify PLAY mode against AI.

Just want to note that this doesn't unlock in universe mode. I tried it while going for other achievements and no luck. In exhibition it unlocked first attempt.
