You need to be in a backstage brawl and in the canteen area, from here you need to throw a tray at your opponent using LB.
This achievement can be a little tricky especially if you don't know where you're going, if you are unable to find the canteen or are still unsure what to do I have made a video on this achievement:

Backstage brawl. Walk past the garage and you will eventually come to a room with black curtains and a vending machine (it's near the end of the backstage area). This is catering.
The center tables in the back have a stack of silver trays. There won't be an indicator, but if you hit LB, you will throw one behind you.
Hit an opponent and it unlocks.

I can also confirm that this does not work in Universe mode. I tried it there with no achievement, however it unlocked on the first try in exhibition.
