Quick solution for anyone wanting to speed this process up.
Go into PLAY mode and select One On One, go to match options and set the following:
Win by Finisher - On
Starting finishers - 3
Save as: 1FD
Go into universe mode and do the following:
Select “Tonight’s Show”
Edit Show (Y)
Edit each match and select “Customize Match”
One on One then Custom Matches on the bottom row & select 1FD from here.
Do this for every match & start the show.
Matches with loading should take around 1:30.
This should take around one hour & 15 minutes.

How do you edit the show to have that stipulation?
I have the stipulation saved after setting it up on play mode but can't see a way to use it in Universe?

you can do it that way but takes so much more time then just getting a count out. he is an idiot. I voted negative because you do not have achievement. don't do solution without having it done. makes you look stupid

The fastest way I have found is to use a second controller and just knock down and pin. then just select next match instead of exit. this makes the matches maybe 1:30 each with load times (which takes the longest)

Note: It doesn't work for tag matches so edit those out.

The fastest solution is to edit the matches like xKRIS DETHx desribed.
So just create a custom match in "PLAY mode"(Win by finisher on etc....) and edit one show at the Universe.
To speed this up you should copy your save file 2 times and play only one show. It's faster to just reload the show and not to edit a new show. You can also pick up Roman Reigns or another wrestler with a fast finisher move to be a bit faster.
