This achievement can be relatively quickly done over just 3 matches, 4 if you want to win a title.
DO NOT DO A TOURNAMENT FOR A VACANT TITLE. I tried to win the WWE UK Championship through a Tournament and I got stuck in a match loop after the final as the game glitched out.
Set-up: Play -> Tournament -> One vs One -> New. Select whatever options you want, I'd recommend not selecting a Championship. The only option that matters and needs to be changed is the "Damage Retention" option at the bottom.
Once you have your desired settings, set "Damage Retention" to ON and advance.
Set the brackets up however you'd like and press
to advance to the matches. To unlock this achievement, you need to play, and win the tournament using one superstar. You can simulate the other matches that they aren't involved in safely. Once you win the 3 matches, the achievement should unlock.
If you did it for a title, you will need to win 4 matches.

For me, I tried simulating the matches and playing the final but this didn't work. So, I picked HBK and changed all the opponents to low rated ones and played all HBK's matches and this worked for me.

Tournaments can only be done in play now mode so thats where you will select this, before selecting your superstars make sure to set damage retention to on and choose a superstar to use from the first to the final round and win all the matches. You should play on easy as damage retention will carry damage sustained from one match to the next.
