This achievement is easy to complete using the resiliency payback.
Select any superstar for yourself to use, but make sure you give them the resiliency payback. There are certain superstars that will have it automatically, but you can give it to any when selecting.
Next choose an opponent who has a submission as there finisher or signature, I chose Drew Gulak. This step isn't necessary but opponent is more likely to use a submission this way.
Start the match and let the opponent beat you up until you have a full resiliency payback (you can also let them get their signature or finisher submission doing this).
Once they lock on a submission instantly hold RT+Y to activate resiliency before any overlapping can occur.

I also did it in a submission match so that they were forced to use submissions

Thankfully you do not need to use the Right Stick submission minigame. All you have to do is escape a submission without allowing your opponent to gain any ground. There is a bit of luck involved, but just mash the buttons and you should be good.

Start a match using someone who has resiliency such as Roman Reigns, let your opponent damage you until you earn your level 2 payback, now once they put you in a submission immediately press 
+ 
to use resiliency to break out of the hold thus never overlapping. If you are having difficulty being put in a submission by the A.I versus someone who only has a submission finisher such as Bret Hart or Ric Flair.
