(CopyPasta I'm playing through XB1 copy atm)
I did this as brock lesnarr playing a random rumble match to check out character models but if you need some help try this:

Pick either Roman Reigns or Brock Lesnarr (highest stats)
Set up a standard royal rumble match
Go to match options and select edit participants
Select only people with <80 rating avoiding and heavy weights or Super heavies.

Start the match and try to eliminate without using signatures & finishers (save them to make difficult opponents stunned)

If you see an AI make another AI stunned interrupt and throw the stunned wrestler out. If they hold the ropes running strike & if they’re stunned they’ll drop out.

Generally you just want to focus of stunning and eliminating stunned wrestlers until you’ve achieved 14.

Once an opponent is stunned throw them to the ropes and running strike them for an elimination.
You can also pick up opponents (using LS or RS I can’t remember which) and hold them onto the air and just throw them out which is quite fun.



Update: After finally playing XBX version.

Mostly the same as beforehand.
The goal is to eliminate your opponent before the next one hits the ring, this way you won't have to worry about reversals or being screwed by other AI in the ring.

As soon as your opponent is in the ring, beat them up until their green bar is between 50-75% (the lower the better but you are on a schedule).

Strong Irish whip your opponent so they go over the ropes to the apron.

Running strike your opponent.

Rinse & Repeat until victory.
