Ensure the match win condition is Submission Only and it's a cakewalk, the only thing that can cause the metre to deplete is how fast you do ring-out counts, but if you immediately check submissions 
when they're applied, it'll fix it right up.

Make sure difficulty isn't on easy. Running showcase on easy will change the exhibition difficulty to easy and none of the "Vs AI" achievements will unlock

Normal, submission only, turned off ring out also. Checking subs basically gets you full and then you just call it when someone taps. Easiest way I found.
