I did this super easily in the Superstar mode. Once you hit play next match and it shows you your opponent. Click in on

for rivalry options. Add an action to your side, select ambush and scroll down to ambush during entrance then press

to finalize it, press

again to save the rivalry option then start the match. It will show your opponents entrance in an unskippable cutscene where you will run out and begin to attack them. Fight them as far up the ramp as you can to avoid them throwing you into the ring to officially start the match. As long as you keep fighting them outside the ring without it actually starting eventually there will play a cutscene where the ref calls off the match and the achievement should pop.

I got it by classic mode, simluating to MITB. That honestly makes no sense. I did the other way by attack during entrance and it never unlocked, so it might have auto picked a rivalry action, so that feels a little contradictory to the cheevo's description about unlocking through superstar mode. If the other way also worked, it might have unlocked earlier.
