on easy difficulty this is totally doable with only one person if you have a second controller:
before the start of each wave use controller two to build towers from their resources then move to controller one to continue to build towers.
start the wave and leave player two in 'ghost mode'
there are more enemies on each map in co-op but if you've played the single player campaign you'll know how to defeat them easily.
the last two bosses are a bit tricky with one player but if you've set the map up correctly for the smaller enemies and placed anti-aircraft towers with laser and swarm weapons near the boss you'll be fine

In co-op mode the bosses have 200% health. If playing solo you'll be better off putting down towers than trying to damage bosses with your ship.

If you have a friend who has completed the Co-op campaign you only need to play one mission. Have the account that has already completed the campaign start the game and select "continue co-op campaign" from the main menu. Have the account earning the achievement login as player 2.
Play through any mission you want, upon successful completion of the mission the 2nd player will earn the achievement for completing the campaign.

Unlocked by beating the main missions (South Africa, Great Britain, Germany, Russia, USA, Mexico, Hawaii, China & Japan) in co-op campaign (any difficulty).
