How to unlock the Stop Hitting Yourself achievement in XCOM 2 - Definitive Guide
Hacking a turret requires a Specialist Sergeant specced out to include the "Haywire" ability. Turrets can be found quite early in any campaign at random, but are a guaranteed part of the Blacksite defences so that's probably the first place you'll encounter one.
Haywire will use your Specialists hacking stat to oppose the turrets hack defence of 70 - the higher your stat the better your chance of hacking and dominating it. The Hacking stat will increase with rank but you can also give it a boost by researching and building improved GREMLINs (requires the Advent MEC Breakdown research project).
Once you've found your target, save the game, then try to hack it. If it doesn't work, load the save and try again until it does.
The hard part is actually killing anything with the turret once you have it as they seem to have terrible aim. Your best bet is to try softening up any viable targets with your other troopers and hoping for the best. Again, save scumming is probably a good idea.
Alternatively, if you have the "Shen's Last Gift" DLC pack you can this done easier and earlier than it could be completed in your vanilla campaign.
During the "Lost Tower" mission, Lily Shen will be part of your ground team and if you attempt it as soon as it's available in your campaign she will be significantly better than any other support trooper you have available (she seems to be equivalent to a Colonel but with access to all skills, and a hacking stat of 140). Once you progress to the second segment of the mission, you'll find yourself in a large hanger type room. Moving towards the objective (the "Spark") will activate a number of dormant Decaying Turrets. Simply use Lily's Haywire ability to take one of them over (it should be close a 100% success rate) and use it to attack any other turret in range.
Again, they are awful shots however so you may want to soften up the enemy turret just to make sure.
While on this mission it is also possible to get the following achievements the same relative ease:
(Taking control of the turret will also count for this)

Sorry, but if a solution for a base game achievement can only be used by people who own DLC, I'm going to have to downvote it.

That's fine. I'll amend it later for those who don't have the DLC once I know at what point it becomes possible. The DLC just makes this much easier and faster.

Hack a turret with the specialist's haywire protocol and pick the option to gain control over it rather than disable it. To boost your chances of a successful hack you can increase your soldiers hacking stat with an upgraded gremlin, the hacking PCS, and equipping a skulljack. Once the turret is hacked it has 2 shots per turn to hit an enemy, so pepper an enemy with fire from your soldiers until its around 3-5 hp and then keep trying to hit it with your turret.
Similar to Mechlord. Here, you must use your Specialist's Haywire Protocol ability to hack a turret and then kill any enemy with that turret. Unfortunately, turrets are not very strong and cannot move but they can attack three times per turn and can also use Overwatch. If you are having trouble with this, it might be a good idea to weaken an enemy with another unit first and then finish him off with the turret. You will have plenty of opportunities to get this trophy.

It is very convenient to make this trophy in the “abandoned building” mission. First mission of dlc2 (last gift shen). You will be given Lily Shen for your team - this is a pumped-up specialist class fighter with a drone. The mission is full of enemy turrets and mecs. Personally, I destroyed another turret with a captured turret, and they gave me the trophy. It would be best to capture a turret, then bring another enemy turret to 1 HP and only then shoot the captured one. If you're playing through a bug, it's easy.
Remember one thing: if you made a safe, then shot and missed, then there is no point in loading the safe and shooting again. The result will be the same. After loading the safe, you need to do some other actions, but do not shoot.
