Race time counts toward this so find a mode you enjoy and work on it assuming its not Free Play or Time Attack. This will likely come as you play.
Alternatively, if you want to get it done early as I did for an achievement with a '3' in it and some TAD to boot, you can start a game in split screen (assuming you have at least 2 controllers) and let the game just idle. I used wired controllers so I'm not sure if the game pauses if a controller turns off. Finish the race to unlock the achievements earned.
