How to unlock the Legendary Champion achievement in Yakuza 3 Remastered - Definitive Guide
This is not a solution for the fights, I think everyone who is going to complete this game shouldn´t have too much trouble with the coliseum fights. This is just some additional info I couldn´t find anywhere for unlocking the last tournament.
For in depth information for the tournament unlocks and tag partner recruitment check CyricZ´s guide:

It took me a really long time to unlock this achievement, because the last tournament - Maximum Grand Prix - just didn´t unlock for me. Every guide I could find on the internet said it unlocks by completing the Hyper GP and Magnum Force GP five times each. This was in my experience only partly true, since it only unlocked after I had recruited 4 tag partners in addition to those wins.
I can´t be sure if you need 3 or 4 tag partners since I recruited the last 2 before going back to the tournaments and see that Maximum GP unlocked.
Maybe this was just a me problem, since I could'nt find anything at all on this anywhere, but I definitly needed those tag partners to unlock the last GP. No guide that I could find said that. Hope this may help others that also struggle with unlocking this.
Edit for anyone that struggles with the coliseum fights:
The only real advice I can give anyone is to just train the use of tiger drop. As soon as you get the hang of it, pretty much every fight in the first 4 Yakuza games are a piece of cake. A huge help is to keep a little distance from the opponent and then backtrack as soon as they attack and use the tiger drop at the same time. That way it's very reliable as soon as you find the rythm and knocks out most opponents in 2 to 3 hits.

Ah yes. Absolutely no one will have trouble with Mon Armor Komiyama, the cunt who will casually circle around you instantly and take out a quarter of your health (fully maxed out) in one combo ON FUCKING EASY. No, it’s absolutely impossible for anyone to struggle with such a deadweight opponent. For any future "LaD 3" players, this Coliseum is abysmal, and that’s by the already very shitty standards of previous Coliseums. Absolutely get sonething (2nd/3rd playthrough would probably be best) to give you a break from this genuine hell hole, and don’t bother with the harder tournaments until you have Heat regeneration on low health + the ability to restore your health with Heat, that is a gigantic crutch.

That might be a you problem. The Maximum GP opened up for me as soon as I accrued 5 wins in both Magnum Force and Hyper GPs. Or maybe there's another qualifier to unlock the final tourney that I'm not aware of like it only unlocking after a certain chapter.

Unlocking higher-level tournaments at the Coliseum requires winning a certain number of rounds of each tournament. It doesn't matter who you beat.
The tournaments are broadly split into two tracks, as follows:
- Street Fighter GP. Available from the start.
- Breakout GP. Win Street Fighter GP three times.
- Heat GP. Win Breakout GP three times.
- Bounding GP. Win Heat GP three times. Available in chapter 9.
- Bomber GP. Win Bounding GP three times.
- Tag Match GP. Win Bomber GP once.
- Twin Dragon GP. Win Tag Match GP three times. Available in chapter 10.
- Exhibition. Available from the start.
- Golden Gloves GP. Win Exhibition three times. Available in chapter 9.
- Weapon Master GP. Win Golden Gloves GP three times.
The final three tournaments requires success in both tracks:
- Hyper GP. Win Weapon Master GP three times and Twin Dragon GP once.
- Magnum Force GP. Win Hyper GP three times.
- Maximum GP. Win Hyper GP five times and Magnum Force GP five times. Available in Chapter 12.
A special note about the Tag Team GP. You cannot participate in these matches until you have tag partners.
Getting the first one, Maxim Soldadov, is straightforward: Beat him in the Coliseum (he appears in Exhibition). He will show up outside the Coliseum entrance and will offer his services as a tag partner. Unfortunately, he isn't very good.
Here are the unlocks for the other four:
- Daiji Hiyama. Beat him in the coliseum (Exhibition), and break 50 weapons in combat. Then find him in Smile Burger Nakamichi.
- Bruce Ebinuma. Beat him in the coliseum (Heat GP), and win 50 street fights. Then visit Earth Angel.
- Keigo Jinno. Find him at Mach Bowl.
- Masayuki Hatae. Do five rounds at the Batting Center, then talk to the man wearing a yellow jacket.

Hmm, pretty relieved that I glanced at this now rather than wondering why it's not working after countless matches.
From what I recall they aren't.particularly upfront with how you need to win each 3 times, admittedly I didn't read the "rules" selection when talking to the guy in the entrance.
So, I expected it to simply be accumulated experience in the Colosseum and therefore did the ones deemed most difficult and/or that I can finish fastest like in at least one prior game, although I played the newer kiwami versions.
Currently I'm at bounding and exhibition respectively and were just doing heat over and over as it was preferable to bounding so I wouldn't have gotten further than that without this knowledge lol.

Good guide. I just want to add that I only needed to beat the Weapon Master Grand Prix once in order to unlock the Hyper GP, instead of 3 times.
