You can roll by pointing your left thumbstick a direction and tapping 
. When a nearby enemy is about to attack simply roll dodge away and your achievement will pop. This can be unlocked immediately within the tutorial.

On PC the (default) key for rolling is ALT.
I was unable to get it while fighting normal enemies... But when Dinkoy (the first guardian) appeared and was shooting fireballs, rolling out of the way of one of those got me the achievement.
