Parrying can be done as soon as you begin the game on any difficulty. You can block by tapping or holding 
. To parry, you attempt to block, but right when they are about to land their attack. Keep an enemy alive early on and keep trying to time your blocks just right until a parry happens. You will know that you did it because it will stun your enemy and pop the achievement.
