How to unlock the Easy peasy achievement in Ziggurat - Definitive Guide
Okay, this is going to a be a short guide because I want to save you guys some time.
The setup you want to do is the novice class on easy and continually just check the rooms without activating them to try and find the key and boss room as soon as possible.
You want to do this to minimize the chance on being hit in one of the regular rooms.
It's up to RNG what weapon you get at the beginning and where the key and boss rooms are, but it's pretty common to find both the key and boss room after doing one regular room or so.
On to the boss fight, the best one to get is Gunkarr the Crusher as he is easy to dodge. Once he spawns lay into him until he runs at you, at that point you want to run to a far corner away from him while jumping. If all goes well you will not have gotten hit, now when you make it to the far corner turn around and Gunkarr will be standing where he smashed down leaving him open to attacks. Once he starts running at you again run to the corner away from him either left or right. If he spawns the little banshees (flying ladies) they should be pretty easy to avoid their attacks just by hiding behind pillars.
Using this strategy it will shorten the time to go for this achievement (probably an hour tops) and should guarantee killing him after a few rungs of attacks.
If you end up with any other boss it's pretty hard to do as Sir Arthur or King Blob are the most common ones I've seen and they are pretty hard to dodge attacks from. I recommend trying any boss you make it to, but if you really want to save time just try when you end up with Gunkarr.

Alot of what this guide says is very good, poking your head through the doors is a useful trick.
I would recommend doing this with the Librarian instead of the Novice. With his starting perks, the Librarian can burn a level 1 boss down with spells significantly faster than the Novice can with the Wand.
Was able to do it in about 3 attempts, I got lucky with a Flame Tome at spawn.

Something of note - Tributing health to a shrine does not discount the achievement. Just earned it on a run where I gave 25 health to a shrine.

I like DanTheWhale´s solution. But I have an alternative one for Sir Arthur.
General Tips:
1) Choose the templar, as you can easy stack mana for his alternative weapon by defeating enemys. So you can fight the end boss with full mana reserves
2) Start the game new, until you have an easy route to the floor boss. This way you can spare time and nerves
3) Try to kill enemys over a long distance. Because you will have more time to see projectiles over distance and also melee attackers can be killed without much trouble.
4) Always look for respawn. The game often spawn enemys in your back
5) Fight Sir Arthur as he only has one attack and this one can even be avoided without much trouble
See my video for more and detailed information. I will show how I locate easy and fast routes to the boss. Both of my routes only take around one minute (loading time included) to the floor boss. My fight with Sir Arthur is a bit lengthy (~2 Minutes) as I prefer a slow but safe kill. But this way you can also study his attack pattern and how I avoid his projectiles.
