The only enemy you aren't likely to get after several attempts is the Bone Summoner. As far as I can tell, it only spawns on the fourth floor and higher. So it may be best to go for it while doing

All enemies have a kill limit to show up in the bestiary, with all bosses having a kill limit of 1. This was the last enemy I needed and I had only found like 3 in the course of getting every other.
Also of note - I say fourth floor, but I really mean the floor called Cursed Cathedral. I think Easy and Normal have the same amount of floors so it shouldn't be relevant, but Hard I think has 6 so the floor numbers and names might not match up.
