How to unlock the Photographer Extraordinaire achievement in Zoo Tycoon - Definitive Guide
The Animals photo album consists of a photo of every animal and their colour variant. Mini Exhibit animals don't have a colour variant as they don't have babies (in the game).
To get a colour variant, make sure that the animals requirements are all full, as each species have their own social requirements, food, toys and exhibit. To speed up the process and increase the likelihood of the offspring being a colour variant, I'd recommend having 2 sets of male/female so they can reproduce faster. Make sure it's a medium or large exhibit so that there's space for the offspring. Also research Animal Breeding which can be found at the Main Gate under the Research tab, this will increase chance of animal breeding and skin variant babies both by 50%. I used a guide made by evilknight23 which is located here:

The guide helps you mark which animals you've took a picture of and ones you haven't with-out having to go in and out of the photo album all the time.
As for the Hidden Coins (25 in total), they're very easy to find using these video guides. They were not made by me, credit goes to The Xbox Hub on YouTube. If you have difficulty seeing a coin, try moving the exhibit so that the sun reflects off of the coin.

The two photo albums are for each animal and its variants and another for the hidden coins.
Obviously the animal photos is a matter of photographing when you buy one then another when you breed the colour variants. Easiest done on freeform as money isn't a limit at the beginning.
The coins are slightly harder as they appear in and on the exhibits and are a tad harder to spot at times. I will refer to the housing in the exhibits as the cave.
Alpine
Red Panda Coin. On top of the Large Alpine Exhibit, whilst standing on top of the cave look to your right.
Peacock Coin. On the left hand side just before the entrance to the walkway cavern on the Large Alpine Exhibit.
Zoo Keeper Coin. On the Large Alpine Exhibit, there is a little walkway hill that you can go up to get on top of the exhibit (not the ramp near the peacock coin). Under this walkway is an entrance to the tunnel. Go to that entrance, and look up and to the left (while facing into the tunnel). The coin is on the rocks near the top of the tunnel. Grasslands
Bear Coin. On the right hand side of the cave in the Small Grasslands Exhibit where the cave meets the exhibit wall.
Giraffe Coin. On the large wall to the left of the cave in the Medium Grasslands Exhibit.
Rhinoceros Coin. Inside the Large Grasslands Exhibit, inside the right hand side of the doorway of the cave.
Hippopotamus Coin. On top of the Large Grasslands Exhibit, on the right hand wall of the elevated viewing area.
Savannah
Fossa Coin. On top of the cave in the Small Savannah Exhibit.
Binturong Coin. Just inside the cave of the Medium Savannah Exhibit, left hand side.
Lion Coin. Just to the left of the cave on the Large Savannah Exhibit.
Antelope Coin. Standing at the edge of of the Large Savannah Exhibit, so the cave is in the distance, there will be a row of rocks halfway through the exhibit, the coin is facing away from the cave in the middle of the row of rocks.
Temperate
Tropical
Snake Coin. Found on the top of the cave facing to the path behind the exhibit of the Small Tropical Exhibit.
Capuchin Coin. Next to cave entrance on Medium Tropical Exhibit, on the left when facing it.
Flamingo Coin. Inside the walking cave behind the waterfall of the Large Tropical Exhibit, on the roof before the archway that looks out through the waterfall.
Turtle Coin. In the Large Tropical Exhibit in the corner where the lower viewing area meets the slope you'll see the coin just inside the exhibit after the slopes wall. (Thanks evilknight23)
Tundra
Sloth Coin. On the Medium Tundra Exhibit, look to the right hand side of the cave, just around the corner you'll find the coin just above the walkway behind a tree.
These achievements require that you fill all the photo albums in the game. Photo albums can be found in the Game (Pause) Menu under Albums while playing any game mode. To take photos, you must be in Zoo view (third-person of your avatar) and then push . Use the sticks to zoom-in or look around. Snap a photo with .

You essentially need to snap a picture with the camera of every animals species in the game, as well as all of the color variants. In total, this will require 166 photos. You will have to adopt each of the regular species, but the color variants can only be bred. See "One of Everything" for more info on breeding color variants. For the Hidden Coins, there is one album consisting of 25 pictures of the Hidden Coins in the game. These coins are hidden among various exhibits, usually embedded in the walls/roof of the rock shelter of the exhibit, but not always. The coins are bronze in color and are a little larger than your in-game characters head. The specific coins and the exhibit they are found in are listed below (thanks to Van Uden for compiling the list):

It needs to say either Hidden Coin or Animal album. If it says Photo Journal instead, take the photo again as it was not recognized correctly (or you already have that photo).
