How to unlock the Parkour Master achievement in A Short Hike - Definitive Guide
Simple race and beat Avery a bird in 3 races around the map, they will limit the max feathers for each race. Running shoes are encouraged.

The silver feathers are a MASSIVE help for this achievement. You can get them from giving the bird at the foot of Hawk Peak 400 coins for tuition (after you buy all his feathers for 100 each), and at the top of the island southeast of the main island. These help you run faster and fly higher and make these races even easier than they already were.

I'm having issues with this race. I've beaten her in all races at least once, should I be beating her "x" amount of times before it actually goes through?

There are three parkour races you'll need to win to complete this achievement. Avery, the host and your competition, will appear randomly in one of the three race locations. Beating her in all three races is simple as she always sticks to the paths, meaning you can use shortcuts. This video shows how to find Avery in A Short Hike. This video shows how to beat each parkour race in A Short Hike.

The first two races are pretty straight forward and you might even be able to manage them w/o the running shoes of the rabbit (get her a new headband from the turtle for the shoes). They are quite short.
The third race, from visitor center to the peak, is the hardest and longest. After doing some exploring I found a quicker route to the peak, that needs some preparation.
You need to open the cave entrances just north of the ranger‘s hut, which connects to the mine entrance in the northeast of the island and the entrances for the cave that connects the cliffs on the eastern waterfront (south of the boat where you can sell your fish) with the snowy eastern part of the peak area.
There you will find a hot spring and a jump flower, if you follow the path directly south and then west out of the cave. Glide north and slightly to the left to find another jump flower just below another hot spring.
Once the cave connections are open and the jump flowers activated you can take this short cut instead of chasing after our friend. You can glide over to the regular path or to the cliff directly north of the last spring to get to the peak from there. Takes about 6-8 feathers. They’ll arrive about 15-ish seconds after you made it to he top.

There are 3 Parkour Races that you need to win to get this achievement. I'd recommend that you get the Feather Forever achievement before you do this one, that way you will have the max amount of feathers and will have already been up to Hawk Peak and know the way (one of the races is to the top of Hawk Peak).
Avery is who you are racing and they will limit the number of feathers for each race and recommend you find running shoes, I didn't bother with those, just follow the route I take in the video and you'll do this pretty easily if you've maxed out the feathers. After meeting Avery, she gives you a walkie talkie that you can use to locate her and challenge her to rematches if you lose a race.

There are 3 parkour races you'll need to win for this trophy. All of them are started by talking with Avery but if she's not there, you'll need to come back later. There is a pair of Running Shoes you can get from a short quest that will make you run faster but these are far from being necessary. If you don't have them, Avery will just ask if you're sure you want to race without them. Just say yes and start each race (they're not too terribly difficult to win). You can do these in any order so long as Avery is present. Once you've won all 3 races, the trophy will unlock.
The locations of the races are as follows:
Race 1: Royal Ridge. There will be a tree with a white ribbon tied around it. The race will start here and end at the Lighthouse. Avery will stick to running but you'll go much quicker if you fly. Just keep an eye on your Feathers as you'll only have 3 available to use for this race.
Race 2: Graveyard. Up above the Eastern side of the Graveyard will be a tree with a white ribbon tied around it. The race will start here and end at the abandoned building to the Northeast. Just as with the 1st race, Avery will stick to running but if you fly, you'll beat her by a decent amount of time. You'll get 5 Feathers to use for this race so be sure to keep an eye on them and touch the ground should you need to replenish them.
Race 3: Visitor's Center. This one will be just Southwest of the Visitor's Center. It'll start here and will end at the summit of Hawk Peak. As with the previous 2 races, Avery will stick to running along the main path but you can fly and climb up everywhere, allowing you to get well ahead of her. You'll have 9 Feathers to use for this race, which will be more than enough to get you to the summit quickly. When you get to the snow area, be sure to use the hot springs and/or fire pits to replenish your Feathers since they'll become frozen in the cold.
The locations of the races are as follows:
