Right at the end of 'Game Over' when you are defending yourself on the collapsed bridge, the very first enemy truck will pull up, ram a parked car and reverse.
An enemy soldier jumps out of the front passenger door and is armed with the M60. Kill him, pick it up and get a kill with it and that should be the last gun you need in the game. No resets or save deletions required.
I have provided a full comprehensive list of all weapons needed below.
I do not believe that C4, Claymores or Flashbangs are required as these did not increase my progress bar or were never used to kill an enemy. I'm also not 100% sure about grenade launchers but if they are required, you do not need both the M203 and GP-25 as once again my progress bar did not increase after a GP-25 kill but I hadn't started checking until way after my first M203 kill.
I'm also not sure regarding different versions of the same weapon i.e. MP5 and MP5SD and M4 and M4 Special Operations Modified but would recommend using all variants.

This achievement seems very glitchy, I got a kill with every weapon twice, all variants and even direct impact witj all grenade types. If anyone has this achievement stuck at 96%, delete your save data and kill with the pistol, knife and MP5 in Crew Expendable and it should unlock for you like it did for me.

All you have to do is click file then make a copy so you can make changes to it. When you get a kill with a gun just go under the acquired column and find the gun, then click the box next to it and click the bucket at the top and change the fill to black.
The Mile High Club mission has a lot of enemies and they drop a wide variety of different weapons so if you’re not sure which ones you haven’t used yet and you’ve definitely done the 3 rare ones listed below as well as all the explosives, then try Mile High Club on Recruit and just farm all the weapons you come across. Like every other trophy in the game your progress toward this carries across between playthroughs and mission select and a kill will still count if you quit out of the mission immediately after.
There are 3 weapons that are rare and only attainable at specific points in the game though...
Desert Eagle - This is only dropped by one particular enemy during the Crew Expendable mission. In the first room with cargo containers in and the raised walkways on the right and left (same room as the second intel) an enemy will shout as he jumps out at you from inside or behind one of the containers. He will have the Desert Eagle. For more information see the Desert Storm trophy which involves getting 5 kills with it.
M16A4 - This one can only be found during the War Pig mission. Some of your allies will have it equipped so when any of them are killed check which gun they dropped.
M60E4 - This is only dropped by one particular enemy right at the end of the Game Over mission during the closing moments of the game. After you crash then climb up from the crumbled section of the bridge an enemy truck will drive toward you before reversing back up the road. The soldier that jumps out from the passenger side will drop the M60E4 when you kill him so run and grab it and use it on one of the other enemies while you have the chance.

I started a campaign on veteran, for my intial play through leaving everything else on default. Half way through the game I enabled hit markers. Finished the campaign, went back and unlocked all the other trophies and focused on this one, which would not unlock. Then I noticed all the play throughs I was watching online had the hit markers disabled. I turned mine off, played through crew expendable and shortly after I got the Desert Eagle kill, it unlocked.
Again, not sure if that's the problem but that's what I did and I hope it helps.
All credits goes to PS5Trophies Youtube channel. Still think this is the most accurate guide across all over the internet.
All the weapons you need for this trophy are listed below so you can keep track as you play. The majority are either given to you at the start of one of the missions or are readily available to pick up from dead enemies. So the best advice is to check which weapons you have at the start of each mission, including the explosives that you equip using the d-pad, and make sure to get a kill with each one. You can start picking up every new weapon you come across, this was you'll use the majority of them and will only need to keep your eye out for a few remaining weapons. The launchers that lock onto vehicles only require you to destroy an occupied enemy vehicle for it to count.

I need to test out whether both the grenade launchers are required or just one. If anyone knows for sure please let me know. For now you might as well grab a kill with both of them.
