How to unlock the Casino Night achievement in Cuphead - Definitive Guide
This is the path I took - 2, 4, safe, and 8 OR 9, depending on which has a extra HP. After that, go for safe and then finish.
I used Spread and Chaser as my main weapons. Chaser is weak, but it allows you to focus on your surroundings. I used P. Sugar as my charm again, just to let me focus more on my surroundings instead of thinking about hitting the parries. It's not really necessary to build up your special meter more than once in these fights (I saved mine up for the last fight).
2 is the Chips. I used Chaster the entire time. Simply jump out of the way of his attacks. The only thing to look out for is his bottom chip. When he's on the left side, it's obscured, so make sure it's moved before you switch sides.
4 is the Domino fight. I picked this instead of 6 (Horserace fight on a plane) because it's simply easier to get through without getting hit. Use either weapon ( I used Chaser again) and just jump over the spikes. Be sure to hit the parry as often as she spits out a pink orb. When she sends out a flying domino, turn around and hit it with Spread, it'll die almost instantly.
Both 8 and 9 are really easy. Pick whichever has an extra heart. If neither has one, I'd go for 8.
8 is the 8-Ball fight. Very easy. Just stay in the middle of the area. DO NOT go on the left or right sides, that's where the chalk enemies fall to. It's really hard to dodge them falling if you're not specifically paying attention to their spawns. There's really no reason to go over there. The 8-ball only has one slow attack. Just keep shooting away while dodging his slow attack and the 2 chalk. Really easy fight.
If you're more comfortable flying, choose 9. Pay attention to the cards and when they flip back, you have to match the cards. When you do, you'll choose the monkey for about 15 seconds then you'll have to pick more cards. The monkey (besides flying around and hitting you) only has one slow attack. Once you get to the finish, your host will suddenly attack you. He's actually really easy. As soon as he attacks, hit him with your special. That should drain a quarter of his health. When he puts an arm down, run to the opposite side. He'll make a row of cards come out. WAIT as long as possible and for as many cards to come out before you jump. The goal is to parry on all the pink cards, and this way you're able to tell where they all are before you get too close to his hand. If the first pink card is 4 cards away, you'll have to jump-dodge to it, otherwise simply parry to each card. After the cards are gone, do as much damage to his face as you can. I had to jump over 5 rows of cards when I finally beat him.
If you get hit on either of the first 2 fights, just start over. My goal was to get to the final fight with at least 3 HP. After you fight these guys 4 or 5 times each, they get super easy.

I just want to comment that I recently beat King Dice (multiple times on a single save) and I have not be able to unlock this achievement. This may be a new bug.

@Dirge Esq, I had the same issue: beat King Dice and didn't get the achievement.
I checked the contract list and noticed all 9 of the bosses are listed and one was just "????????".
To get this achievement, you have to at least face all 9 bosses at least once, then beat King Dice. You do not have to defeat all 9 bosses, just go up against them.

Here is my guide to help you out in the casino if you are having any issues with the boss, hope it helps out!

This trophy will pop after beating King Dice, the last boss at the Casino. You should practice on picking what you want on the dice so you can pick a route you find easier. 3 > 5 > 7 > Safe > Fin is the quickest route. Should be the easiest as well. You have to get straight 3's on the dice for this route so a little practice would help.

The best way for me is 3-cigar. 6-horse at the races-8-billiard ball! The attack patterns of these bosses are simply ridiculous!!!
