How to unlock the Owl Tide Bestiary achievement in Earthlock: Festival of Magic - Definitive Guide
(EDIT: You can unlock this without beating all the bosses. So you only need the normal enemies.)
They are listed here along with locations of where to find them if you are missing one or more. (I'm still going through the game, so more locations will be added when I get to them)
To check your in-game Bestiary, press to open the menu, then select Bestiary near the bottom. All your defeated enemies will appear here. Any open slots represent enemies you haven't defeated.
There is one enemy in the Bestiary that will require the From Beyond perk used in the Spiritualist of the Sands achievement. Kill a ghost in the frozen underworld of Nadir for the Nafnlaus.

This trophy is for defeating every enemy in the game at least once and that includes all hidden bosses. There is a total of 75 enemies that you need to defeat in order for this trophy to unlock. 61 of these enemies are normal enemies while 14 are bosses. You can view your progress or how many you have left by pressing the button and selecting "Bestiary" to see the details on enemies you've defeated. None of these enemies are missable, but it's important to note that some of these enemies require the "From Beyond" Talent Perk. The character you control on the World Map needs to have this Talent equipped so you can see Ghosts on the fields/dungeons. Defeat Ghosts as you come across them to reduce the backtracking that you might need to do later. Other than that, don't skip fights at all. Fight and kill every monster you see on the World Map and dungeons. Be sure to do both Tournaments as well, as some monsters are only encountered in those.

There are X enemies in the game to defeat for this achievement. The game has a Bestiary in the pause menu where you can track your progress. None of the monsters are missable, though a few are optional and you could pass them up in the story without really noticing. This post has a list of all the enemies (in the order you'll find them in the Bestiary) and their locations.
