With Skorm's Bow it's not the quantity of sacrifices but the quality. There are three contributors to quality. Time of sacrifice, robustness of sacrifice, and your alignment.
You get max points by doing the sacrifice on the Sabbath just before midnight (after midnight, the day changes and it is no longer the Sabbath). Days count from zero. That means the first Sabbath is day 6. Any multiple of 7 minus one is a Sabbath.
A bodyguard with max health is better than an ordinary follower whose health is not indicated. If you're good, you can use the heal spell on the bodyguard to give him full health.
If you're evil, Skorm holds you to a higher standard and requires a higher quality sacrifice. If you're evil and having difficulty getting the bow, make your alignment neutral or good. If you're early in the game (before you can donate), the best place to do it is Darkwood Weir. There are two blue nymphs that summon Hobbes--three at a time. Don't kill the nymphs & keep killing the creatures they summon. Keep your combat multiplier high & before long you will no longer be evil.
Once you're no longer evil (or if you were good to start), pop over to nearby Oakvale and higher the bodyguard. If you don't own the house, go to the shack near to where the ghost pirate is/was. Sleep on the pad there until Sabbath evening (day must be a multiple of 7 minus 1). Go to the temple as fast as you can (warp to Barrow and enter Darkwood Weir and go through Ancient Cullis Gate) not engaging in any fights (you want to be fast and don't want the bodyguard to lose health fighting). You'll make the temple a little before midnight.
Make a save file after you enter the temple in case your timing is a hair off. You should time the sacrifice the smallest bit before midnight. If you miss it, it will no longer be the Sabbath so load the save file & try again. When your timing's right, you'll get max points & Skorm's bow. If you had been evil before, the points you get should be enough to restore you to that condition. If you were good, pop over to Darkwood Weir and kill Hobbes until you get back to where you want to be.
My alignment had been 100% good thanks to the +24 alignment boost from plate armor. I got 3,000 evil points. My alignment went from 100% good to 64% good. The damage might have been even worse than the 36% drop because I think, with the plate armor, I had actually been over 100% to begin with.

Most are behind the doors of the Demon Guardians, some can be found in silver chests (you can just buy one).
