How to unlock the The Little Giant achievement in Kunitsu-Gami: Path of the Goddess - Definitive Guide
Seethe is the generic term for enemies of this game, there are 30 kinds of them including bosses, but and the 2 end-game bosses are possibly NOT required for it to unlock.
Here is the whole list of enemies with my simple descriptions by the order of Ema Plagues:
1. Gaki: Basic enemy, sticking out its tongue while crawling on ground
2. Gakinyudo: Boss version of Gaki
3. Hitoban: Basic small flyer enemy, doesn’t attack Soh but Yoshiro only
4. Shibakaki: Basic ranged enemy, fires a projectile from a distance from its face
5. Daigaki: Giant version of Gaki
6. Kamaitachi: Medium flyer enemy, both hands form a scythe with tadpoles-looking things surrounding it
7. Rosokuro: Monk-looking enemy that enchants other enemies while reciting, frequently appears on late levels
8. Mukadejoro: Giant Centipede boss
9. Sumigaki: medium-sized Gaki but much more aggressive
10. Hidarugami: medium sized flyer enemy with a mask but moves like an eel who can grab and pollute villagers to cause damage to other villagers
11. Gotaimen: Ground enemy that looks like a slug with sticking out balls on its face, it fires a giant projectile to cause area damage
12. Hozukime: Suicide bomb enemy who becomes glowing orange when hit and explode if not killed on time, glows in blue and unharmful when killed and can be used to kill other enemies
13. Tsurube-Otoshi: Large flyer enemies, it likes to fly around and ground pound certain times and leave a pool of corruption. High priority enemy
14. Enenra: Tall walking human-shape enemy
15. Batsu: Boss with 6 legs that looks like a giant ant, kind of Soh’s nemesis
16. Hirafugai: Transporter enemy who always holds other enemies to board boats and fire its innards to capsize boats thereafter. Only appears in 2 water levels
17. Shiniku Zamurai: An undead samurai who ended up with multiple knives on his head, dangerous to do melee on it for its deadly attacks
18. Shokera: Feral-looking enemy that does tricky consecutive attacks when standing and ground pound attacks from above
19. Buposso: Boss looks like a giant slim samurai with no clothes on him
20. Dojoyogoshi: pollution version of suicide bomb enemy, leave a pool of corruption on the ground after explosion if not killed on time
21. Nurikabe: Buddha-statue-looking enemy but unfolds to a platform when its HP drained half or at barriers to let other enemies to bypass that barrier
22. Notsugo: Boss looks like a giant baby but got his eyes covered by another awful creature on it
23. Yatsurao: Boss looks like a giant dragon tree with multiple tentacles
24. Raikobo: Boss wields a spear with a spike ring on its back
25. Hikeshibaba: Hag enemy who distinguishes lanterns, perhaps only appear in 2 dark levels
26. Noderado: A giant enemy who has a bell on his head and holds a stick as weapon. it’s only periodically vulnerable after its attacks
27. Yatsukahagi: Boss looks like a giant crab with many spiky legs
28. Nanamagari: End-game boss who has 2 forms
29. Cursed Soh: Hidden End-game boss
30. Kugokaburi: Random spawn, running long crate with legs when hit, easy to miss
All bosses are story-related so cannot be missed, some higher tier enemies appear on late levels more frequently than early levels, however even those levels with objectives tied to certain enemies don't guarantee the spawns. Unfortunately the game only give vague Ema Plagues and first appearances as enemy dictionary to check on, and there is no possible way to see which you haven’t killed. The Ema Plagues are unlocked by repairing broken structures once bases are available, and beating each boss. Hopefully you have unlocked all of them to see their vague shapes to recall which one you are more likely to have missed. All 30 enemies are on the left page of the Ema Plague Shelf.
The last one you might have missed could be Kagokaburi that looks like a long crate with legs which flees fast when hit. It will stop and start to beg once hit hard and I found basic barriers work best to stop it. It’s a rare random spawn that seems isn’t tied to any certain levels and can be easily missed as you are more likely focusing on other objectives or survival.
EDIT: An achievement is tied to kill a Kagokaburi, indicating you already had killed it or not.

Kagokaburi (mimic chest) has its own achievement

Can confirm that you do need to kill the secret boss for this.
