Totem of shielding came in handy for this when I got stuck or couldn't see one I just used it and it stops it from hitting you giving you enough time to destroy it, just wait to the cool down to finish and move on

If you have an extra controller you can get this achievement with no effort at all. It doesn’t matter if you get hit by a Shulker.
You must start up an offline game. Then proceed through the Broken Citadel level until the objective changes to “Open the Gate.” After using the blue key to unlock the gate, get on the bridge and you can safely connect your second controller (press Back on main, then left-stick on the second controller). Defeat the boss and as you’re traveling back to camp the achievement unlocks.

I think this method has been patched as I've tried repeatedly and no dice.

This does work as of 14/01/23, but the second controller has to be signed in with your account that you want the achievement on. So you will need another account playing as the primary.

I just got this in an online game with one friend after getting hit MANY MANY times. I had him hosting the game on apoc +1. We were going to try to stay back but I got stuck and hit by the very first shulker. We just had him stay back and do nothing while I ran the rest of the level by myself and killed the boss while he just waited. I had him warp to me and then I quit out. On the main screen it said reconnect which I didn't like because I wanted it to not remember I was in his game with getting hit. I started a new online game and then just quit out when I loaded into town. I then joined him again and we clicked the exit and we both got the achievement.
The Shulkers are turret-like enemies that shoot a tracking projectile that lifts you into the air and drops you, inflicting fall damage if hit. Just getting hit by one of these negates the achievement. It doesn't matter if the fall doesn't actually damage you. The easiest way to do this is to complete the level on default difficulty either with a friend who can take the hits for you or by using Totems of Shielding to block the projectile entirely.
