How to unlock the The Storied Adventurer achievement in Pillars of Eternity - Definitive Guide
Be warned, achievement is glitchy and may not unlock.

I'll just dive straight into it so there is minimal confusion and list off the important information, followed by instructions on how to use this information for the achievement. You cannot begin progress on this achievement until you have unlocked Caed Nua.

- A Turn occurs when you gain experience while doing or turning in quests; you can gain multiple Turns at once
- Every eight turns (8, 16, 24, and so forth as an example if you acquired Caed Nua before Turn 8), the game rolls 2d50 (this means two 50-sided dice, giving a range of 2-100)
- This number is added to your stronghold's Prestige value; Prestige is increased by restoring buildings and various events (it can also be decreased)
- Adventures are what the game is rolling for on these Turns, and the value is what determines the type of adventure: 2-25 for no adventure, 26-50 for Minor, 51-75 for Average, 76-100 for Major, 101-125 for Grand, and 126+ for Legendary
- A companion must be available and not in your party to be sent on the adventure (they will always succeed, so just make a Level 1 Adventurer for 250cp or use an extra companion you don't want in your party)

Now that we know all that info, the best course of action is to take Caed Nua as early as possible and preferably before Turn 8 (it's easier than it sounds). Focus on the main story and head south to Magran's Fork from Gilded Vale, then east through Black Meadow.
After plot events in the stronghold, you'll be able to restore buildings and hire hirelings. Raise your Prestige to 24 as soon as possible to avoid being given no adventure and then put whatever you can into Security. Prestige must remain at 24-48 until you get a Minor adventure or you will likely miss this achievement. Keep it at 24 for the best odds.
You now play the RNG waiting game. Your Prestige must stay low until you get a Minor, then you can begin raising it.
Don't stress over not having enough Turns! I didn't get a Minor adventure until Turn 88, but I had gotten all the other possible three and only had Legendary left, which I got quickly after restoring the whole stronghold.
All quest experience progress counts toward Turns. Do all the side quests, all the tasks, and White March Parts 1 and 2 offer a ton of quest experience.

Is this still a achieved with one run thing? It’s quite a long play to get to that point doing everything in one sitting?
I’ve gotten a minor first go, so could easily get the others by the end of the game, but I’ve been playing over a few weeks..

The walkthrough and other solution covers this fairly in depth, but this should help as an added tip.
The game calculates the roll for the next adventure after the last is rolled. I.e. it calculates the turn 16 Adventure roll when turn 8 ticks over, turn 80 when turn 72 ticks over etc. This generally means you have a fairly long while to wait until you find out what has been rolled next and would have to redo a lot of content.
As long as you get the minor and average adventure before you upgrade your keep (should be fairly straightforward and only take 16-32 turns, but you can be unlucky and take 48+) the others should came fairly easily, however a Legendary adventure can be awkward to roll if you get unlucky.
If you are missing a certain adventure you have two other options, save up a lot of side quests to turn in at once, covering 9+ turns, that you can check what is rolled, reload, turn in those quests and check again.
Similar to this, but requiring less quests / running about is to wait until ACT III with the The Champion of Berath quest (Celestial Sapling, Heartsong, Frightened Villager quest giver). Completing this grants 7 turns and you only need to fast travel to Raedric's hold, ask to be taken to Readric and kill him.
Simply have one turn less than a new adventure (63, 71, 79 etc.) complete this and have another couple of side quests to turn in or complete some quick bounties. This way you can re-roll an adventure every 5 mins or so until you get the one you need.
There will be more than enough turns in the game to get all adventures, but this can take the randomness out and allow you to force one type for certain.

This is very good advice. However, I don't think this quest line is available until Act III.

The strategy confirming the future roll by way of save states is excellent. In addition to the suggested quest I'd advise holding on to the 4 bounties (you only get 4 at a time) for burst exp i.e. stronghold turns.
And one more thing, confirming what @Cakes said above, the suggested quest Champion of Berath isn't available until Act III. The prerequisite quest to "Lord of a Barren Land" starts in Act I.
