For the challenges (except the Speedrun & Speedrunrt) can I do some levels and come back later, or do I have to do all 13 in 1 sitting each time????
TheRedRodCod has done a great job of writing out the challenge descriptions in his solution, and there are equally as helpful solutions for the SPEEDRUN and SPEEDRUNrt challenges under those respective achievements, but this solution will focus primarily on the NORESTART challenge.
Before that, it's helpful to know that you DO NOT need to achieve the Red Times for the HOTSWITCH challenge, just finish them. On to the NORESTART challenge:

* ...but time stops completely when you stop
And don't be afraid to cheese it. Hide in rooms, doorways, and/or corners, walk into the wall to advance the enemies if you need to until you can cheap shot them from around the corner or through the wall sometimes. Jumping will get the enemies to fire wildly but be careful. Having said that it is my preferred way for getting to safety at the beginning of the last level (check the video), and it is easily reproducible.
Anything else is just basic pointers on playing the game well, so I'd definitely do this challenge after all the others so you know the levels, enemies, and tricks backwards and forwards. I hate it when people say this but: altogether it's not too bad, here's the video of when I finally pulled it off:
Challenges are unlocked once you beat the Story and each feature between 18 and 25 levels from the Story mode with different modifiers, sometimes making it easier, sometimes making it harder. You can access them through the main menu. You need to complete all levels of a single challenge to unlock the next one. Complete all to unlock the achievement. Despite the achievement name, it's not really a herculean task. Below you will find a list of all challenges and tips on how to beat them.
1. KATANA ONLY CHALLENGE
You move faster, but you only have a Katana. You can't pick up objects and you can't throw anything except your Katana, which you can pick up again if it was not destroyed by a bullet. You also cannot punch enemies. The key is to move slowly and take your time.
You can also hide behind a corner and run against the wall. This will make time advance, so the enemies will come to you and you can cut them down one by one the second they turn the corner. Try cutting incoming bullets if you are about to die (this will also earn you the "So it is possible!" achievement).
2. AD2013 CHALLENGE
Melee attacks kill instantly but all melee weapons and throwables are not usable. You can still use guns and shoot enemies. Feels much like the normal mode.
3. GHOST CHALLENGE
To take control of an enemy, press . Hotswitch needs to recharge after you use it so move around until you see HOTSWITCH AVAILABLE to use it again.
In this challenge, Hotswitch is available in all levels and your melee attacks kill instantly. The catch is, that there are no weapons for you to use, though you can still pick up objects and throw them at enemies. Try to conserve Hotswitch to warp out of tricky situations and make heavy use of anything you can throw at enemies. And yes, you can shoot at an enemy, warp into him before the bullet hits him and be killed by your own bullet. So be careful.
4. FULLSTOP CHALLENGE
Time stands completely still when you don't move, but you can only shoot once from each gun and enemy bullets fly faster.
Use the time freeze when standing still to plan your next move. You can also use the "Matrix move" to avoid getting hit in situations that seem impossible to escape.
5. KILLING THROWS CHALLENGE
Throwable objects kill instantly but you can't shoot guns and your melee attacks are weakend (5 instead of 3 hits to kill). Make heavy use of anything you can throw at enemies.
6. BAREHANDS CHALLENGE
Probably one of the harder challenges. You can only melee enemies. There are no guns, melee weapons, no objects to throw. Move really slowly and try to anticipate your enemies moves. Spawn locations are predictable to a high degree so use this to your advantage.
7. SPEEDRUN CHALLENGE
See "Stand REDy" for detailed information.
8. SPEEDRUNrt CHALLENGE
See "Get REDy" for detailed information.
9. HOTSWITCH CHALLENGE
This challenge has only 18 levels and these are the levels that normally do not have Hotswitch enabled. This challenge is much like normal mode, just a bit easier. Last time to relax before the hard challenges.
10. HARD MODE CHALLENGE
From here, challenges get progressively harder. In HARD MODE, time runs faster and enemy bullets fly faster. Additionally, punches are weakened and enemies are not stunned as long as usual.
Move very slowly, throw anything (even your gun) at incoming bullets to avoid getting hit. It may take a few tries, but by now you should be pretty familiar with the levels to be able to beat the challenge.
11. IMPOSSIBLE CHALLENGE
Upping the ante a bit more is the IMPOSSIBLE challenge, where every HARD MODE restriction applies and every gun has just one bullet. Make sure after you fired a shot to throw the gun at an enemy or incoming bullet. Use the time to find the next gun.
12. NO RESTART CHALLENGE
Probably the hardest challenge, not because of the modifiers (they actually work towards you), but because every mistake forces you to restart from the beginning.
You have to play through all 25 levels in one sitting. Fortunately, time completely stops when you stop, so use that to plan your moves carefully. Move slowly to avoid running into bullets and use the "Matrix move" (see FULLSTOP challenge) to get out of tricky situations.
13. FUNFUNFUN
Congratulations, you've almost done it. FUNFUNFUN offers you another chance to relax, because enemies have big heads and every attack is a one hit kill. Should pose no problem.

Katana Only - As the name suggests, this mode you only have a katana. That said, on the flipside, you do move faster though. In this mode you can’t pick up and throw objects, or even punch. You can do nothing except use the katana, which to be fair you can throw, but because of the drawbacks with this modifier you’re advised not to throw the katana, as it’ll render you defenceless.
Like Full Package , the strat here is to hide around a corner and run at the wall, and let them come to you if there’s a lot of them. Of course, if you find time, it might be worth trying to chop a bullet in half with the katana too (for the So it is possible! trophy). And if all else fails: jump. Jump lots, as it screws with the enemies’ aim. Another good strat for this mode (and Superhot in general), is if a bullet is close to hitting you, turn 90 degrees and then walk forwards or backwards (it makes you a smaller target).

ADS2013 - This is a throwback to what the game was like in 2013: instant melee kills, and no melee weapons or throwables. However, guns still exist. It’s a slight variant of what you played in the campaign, so you shouldn’t find this too hard. Try and use the punches where possible due to how overpowered they are.

Ghost - The Ghost challenge allows you to use Hotswitch as your main ability (which allows you to leave your body and enter another). While there are no weapons, punching is allowed and enemies die in 1-hit. In this one, use Hotswitch to instantly kill enemies, and don’t over use it (because it’s on a cooldown), and it only regenerates when you move. Adopt a similar corner and wait approach here too – as you did in Katana Only, although you use fists instead of a sword here.

Fullstop - In this one, time is completely stopped when you are stood still, but enemy bullets do move faster when time is moving. You can only shoot one bullet per gun as well. 'Fullstop' is more about planning than any of the other modes thus far. Before you move make sure your next step is perfect. Remember to use the gun (as a thrown object) when you’ve fired it once too, allowing you to stun and grab the weapon for the next combo.

Killing Throws - Quite simply: you can’t shoot guns, your melee attacks take 5 hits instead of 3, but thrown objects kill instantly. So, in short: throw stuff… lots of it! Do that and you’ll do just fine.

Barehands - As the name suggests, all you can do in this mode is punch. Unfortunately, it’s not 1-hit kills here though, so this can be a wee bit tricky. Just move, jump, and make sure not to get overwhelmed. Make sure you keep an eye out for Red Dudes shooting at you while you whale on someone else too. Try and use the predictable spawn points to your advantage as well.

Hotswitch - The Hotswitch challenge is basically you redoing the first 18 levels of the game, but this time with Hotswitch. It’s as easy as it sounds.

Hard Mode - Now, this is where it gets tricky. In Hard Mode time moves faster, enemies need 5 punches to down them, enemy bullets move faster and enemy stuns don’t last as long. For this one, it is key you take your time and pay attention to enemy bullets. By this point though, you should know the levels like the back of your hand, so you know what’s coming and how best to position yourself and tackle it.

Impossible Mode - Impossible Mode is like Hard Mode, but more impossible. It’s basically Hard Mode, but guns only have 1 bullet as well. Yikes! Again, experience is key here. As is throwing your gun after you’ve shot its only bullet. Think of it like a puzzle: you’ve used one bullet, and thrown your gun, where do you move next: to another object? To get another gun? Again, this may take you a few attempts, but by now you’ll be well-versed on these levels.

No Restart - As the name suggests, in this one you have to do all 25 levels in a single sitting, without dying. If you die, you start again! It’s not as hard as the main game though, as time stands still when you stop, but it can be tricky. Take your time, move slowly, make each move as if it’s potentially your last. Use everything you’ve learned from the other challenges and apply it here.
- RUNRUNRUN - Lastly, something easy to finish things off! In this mode enemies have big heads and every attack is a one-hit kill. Lovely stuff!
While completing this trophy I noticed that:
a) Reds are easy to deceive with primitive strafes (frequent movements left and right)
b) Almost every level has a corner where you can stand and wait for the red ones
c) You can hit the Reds even through thick walls (rest against the wall, if necessary, waste time by resting your head against the wall and shaking left and right, when a “fist” appears, start hitting the Red)
d) Reds do not shoot at you when some red one is your human shield (standing between you and the shooter).
e) On speedruns it is worth moving by jumping - they give a short increase in speed and allow you to kill the red one by “stepping” on him (to kill with a jump, the height of your jump is enough).
If you get stuck on some level, try to find a secluded place to knock down the red ones one by one or recharge the ability.
PS I recommend being one of the last to complete speedruns, because... The experience gained from other tests will significantly simplify the passage.
To get the trophy, you still need to take all the red victories in hotswitch, although this is never a problem
And also if you play in October you will have to go through pumpkin, I personally was only given the coveted prize after it
